Tabbouleh

This Mediterranean salad is best during summer, when you can get the freshest tomatoes, mint and parsley -

1 cup couscous, raw
1 cup water
1/3 cup minced onion
1/2 cup tomatoes, diced
1/4 cup parsley, minced
1/4 cup fresh mint, minced
1/4 cup olive oil
3 Tbsp lemon juice

Bring water to a boil and add couscous.  Simmer until all water is absorbed.  Cool.  When couscous is chilled, add the remaining ingredients.  Serve with crusty bread.

Johnny's Cafe's Salad Dressing

Johnny's Cafe is an Omaha steakhouse that has been in operation since 1922.  It was built close to the Omaha Stockyards and besides serving Nebraska beef, has a great salad with this homemade salad dressing, here is the recipe:

3-4 medium garlic cloves, minced
1 Tbsp salt
3/4 cup water
1 cup cider vinegar
2-3 sprigs of fresh parsley (minced extra fine)
1/4 cup fresh lemon juice
1/2 cup sugar
1 Tbsp capers
1 cup oil

Muddle garlic and salt together.  Add water, vinegar, parsley, lemon juice and sugar.  Mix well and then add capers and oil.  Prepare 24 hours before serving.  Chill well.

Black Bean Salsa/Salad

Truly this recipe isn't a salad, but generally it's eaten like one, since it has whole black beans and it's easier to use a fork than a tortilla chip - the eating method is up to you:

(2) 16 oz. cans of black beans, rinsed and drained
2 large tomatoes, chopped
1 purple onion, chopped
1/2 tsp. pepper
1 tsp. salt
3-4 Tbsp lime juice
1 small can of corn, rinsed and drained
1 large avocado, chopped
3-4 Tbsp dried cilantro, or 2 Tbsp fresh cilantro
1 Tbsp red wine vinegar
3-4 Tbsp olive oil

Combine everything together in a large serving bowl.  Serve with corn or flour tortilla chips (as a salsa).

German Potato Salad

Apparently one of the main ingredients for German Potato Salad (besides the obvious 'potato') is bacon.  This recipe is sans bacon, but I've always loved this recipe, from my mom who got the recipe from The Frugal Gourmet:

6-8 cooked potatoes, peeled and sliced
1/2 cup chopped onion
1-2 tsp. chopped parsley
1/4 cup red wine vinegar
1/4 cup vegetable oil
pinch of salt
pinch of black pepper
1/2 cup warm chicken stock

Mix all ingredients in a bowl, tossing well to combine.
